Whelks in boreal brine

This recipe is an improved version of the classic pickled whelks found in most fishmongers in Quebec. It is the meeting of both our culture and our nature. Our brine is infused by a wonder of our forests, balsam myrique, which brings a fir scent, slightly peppery, a little reminiscent of nutmeg. Very pleasant under the tooth and fresh in the mouth, this bud recipe is an ode to the nordicité of Quebec.
